"Casato" meaning family farm represents the pinnacle of winemaking at Privato. Harvested from Black Sage Hills in Oliver, BC, this wine was aged for 18 months in French oak followed by an additional 12 months lying down in the bottle. This wine will only improve with age. An earthy nose opens to chocolate covered cherries, leather and blueberry flavors that linger on a velvety and generous finish.

This Merlot is deep and rich in colour with hints of chocolate covered black cherries and leather aromas. On the palate the wild warm cherry continues with smooth silky tannins with a rich flavour that lingers on a velvety and generous finish.

This Merlot has rich character and structure. While it would pair wonderfully with Boeuf Bourguignon and carmelized roasted veggies, it is equally elegant with a decadent rich casserole or dishes with creamy sauces. Salads accompanied with red berries will bring out the suttle cherry flavors of the wine.
